How’s everyone’s week going? Are the kids back to school yet? Or are you still gearing up for the grind? Either way, the weekend is here and that means one thing: the perfect time for a big family breakfast. And have we got a treat for you: Fresh Blueberry Muffins! A few ingredients, a little bit of your time, and presto! A delicious breakfast food for the entire family, plus a few leftovers for the perfect afternoon snack. Here’s what you need:
Ingredients
- 1 ½ cups all purpose flour
- ¾ cup white sugar
- ½ tsp salt
- 2 tsp baking powder
- 1/3 cup vegetable oil
- 1 egg
- 1/3 cup milk
- 1 ½ cups Fresh Hurst’s blueberries
Instructions

Preheat your oven to 400 degrees, grease muffin cups or line with muffin liners.

Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder.

Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture.

Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.

To make the crumb topping you will need:
½ C sugar
1/3 C flour
¼ C butter
1 ½ tsp cinnamon
Mix with a fork and sprinkle this mixture over the muffins before you bake them.

Bake for 20-25 minutes or until golden brown.
