  • 3 cups fresh red currants
  • 1 T flour
  • 1 cup butter softened
  • 1 ½ cups sugar
  • 2 t vanilla
  • 4 eggs
  • 3 cups flour
  • 2 t baking powder
  • ½ t salt
  • 2/3 c milk
  • powdered sugar for garnish


  1. Preheat oven to 350.
  2. Remove berries from stems and toss with the flour, set aside.
  3. In a large bowl, beat the butter and sugar until lightly colored and creamy.
  4. Add vanilla and eggs one at a time until well combined. Sift flour, baking powder and salt in another bowl and add to butter mixture, alternating with milk.

  5. Pour into ten mini loaf pans. Top with berries and bake for 20-24 minutes, until a toothpick inserted comes out clean. Sprinkle powdered sugar on top.
