Blueberry Shortcake

A summertime favorite, this colorful dessert is a perfect end to any meal, especially a BBQ!

Ingredients

  • ½ cup butter
  • ¼ cup shortening
  • 1 ½ cups sugar
  • 4 oz cream cheese softened
  • 1 ½ cups flour divided
  • 3 eggs
  • ½ Tbs vanilla extract
  • 1 cup blueberries
  • whipped cream for layers
  • berries for layers

Instructions

  1. Preheat oven to 350 degrees. 

  2. In a large mixing bowl, cream butter and shortening. With an electric mixer, gradually beat in sugar. Beat in cream cheese and vanilla. Add 1 cup flour, alternating with 3 eggs. 

  3. Combine blueberries with remaining flour. Add to mixture. 

  4. Pour batter into a greased and floured 10 ½ x 15 ½” jelly roll pan or two 9” round pans. Bake for 30-35 minutes. 

  5. Cool completely. Once cooled, cut into individual servings and top with whipped cream and berries.
