Blueberry Pie Filling

  • 4 cups fresh blueberries
  • 3/4 cup sugar
  • 4 tablespoons cornstarch
  • 3/4 cups water
  • 1 teaspoon lemon juice
  • 1/2 teaspoon lemon rind grated


  1. In a heavy-duty, medium saucepan, whisk together cornstarch and sugar until there are no lumps. Mix in the blueberries, water, lemon juice, and lemon rind. Cook over medium heat, stirring frequently until mixture comes to full boil and is thick. Remove from heat and cool before adding to pie.
