
Blackberry Layer Cake
A spectacularly creamy, fruit filled cake that looks as amazing as it tastes!

Ingredients
- 1 1/3 cups butter
- 3 ½ cups sugar
- 4 eggs
- 3 t vanilla
- 6 cups flour
- 5 t baking powder
- 2 t salt
- 2 cups milk
- 1 cup pureed blackberries approx. 5.6 oz.
- 12 oz tub whipping cream
- Various berries for topping

Preheat oven to 37Mix butter and sugar until fluffy. Add eggs and vanilla. Add flour a little at a time. Add baking powder and salt. Add milk and berries, alternating, little by little until consistency is right. Additional milk may be required.

Prepare four 9” round cake pans by lining with parchment paper and spraying with cooking spray. Pour batter into pans and bake 22-25 minutes, or until toothpick inserted comes out clean.

To assemble the cake, layer cakes with whipping cream between each cake. Top with your favorite berries. Refrigerate until time to serve.
