Berry Cream Puffs
As my 5 year old said, "MOM!!!! These are the best food ever!"
- ½ cup water
- ¼ cup butter
- ¼ t salt
- ½ cup flour
- 2 eggs
- 1 cup cold milk
- ½ cup pureed red raspberries approx. 3 oz berries
- 1 pkg instant vanilla pudding
- ¾ tsp almond extract
- 2 cups whipping cream
- Various Berries
Preheat oven to 400.
Boil water, butter, and salt together. Add flour all at once and stir until it forms a ball. Remove from heat and let stand for 5 minutes. Add eggs, one at a time, beating after each addition. Continue beating until mixture is smooth and shiny.
Drop by ¼ cups at least 3 inches apart onto a greased baking sheet.
Bake 15 minutes, then reduce heat to 375, and bake about 15 minutes more, until puffed up and light golden brown.
Remove to a wire rack. Immediately split puffs open; remove tops and set aside. Remove and discard soft dough inside puff.
Allow time to cool.
In a bowl, beat milk, raspberries, pudding mix and extract on low for 2 minutes. Let stand for 5 minutes. Fold in whipped cream. Fill the cream puffs and replace tops.
Top with your favorite berries.
tip: hide one for yourself where the kids can't find it.
